    Prep the Vegetables

    Wash and dry the lettuce, then chop into bite-sized pieces. Slice the tomato into thick rounds. Peel and thinly slice the onion. Set all vegetables aside.

    Slice the pickles into thin rounds or spears as desired.

Protein Preparation

    Prepare the Protein

    Choose your protein (shrimp, fish, oysters, or crawfish). If using shrimp or fish, clean and devein if necessary. For oysters, ensure they are shucked and cleaned. If using crawfish, make sure they are peeled.

    Make the Batter

    In a large bowl, combine the flour, cornmeal, salt, and black pepper. In another bowl, whisk together the eggs and milk. Dip the protein pieces in the egg mixture, then coat them in the flour-cornmeal mixture.

Frying

    Heat the Oil

    In a large pot or deep fryer, heat the oil to 350°F (175°C).

    Fry the Protein

    Carefully add the breaded protein to the hot oil in batches, ensuring not to overcrowd the pot. Fry for 3-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Po Boys

    Build the Sandwich

    Slice the French bread rolls lengthwise but not all the way through. Layer the fried protein on the bottom half, followed by the lettuce, tomato slices, onion, and pickles. Close the sandwich.

    Serve the Po Boys with a side of French fries.
