Prep the Vegetables
Wash and dry the lettuce, then chop into bite-sized pieces. Slice the tomato into thick rounds. Peel and thinly slice the onion. Set all vegetables aside.

Slice the pickles into thin rounds or spears as desired.

Prepare the Protein
Choose your protein (shrimp, fish, oysters, or crawfish). If using shrimp or fish, clean and devein if necessary. For oysters, ensure they are shucked and cleaned. If using crawfish, make sure they are peeled.

Make the Batter
In a large bowl, combine the flour, cornmeal, salt, and black pepper. In another bowl, whisk together the eggs and milk. Dip the protein pieces in the egg mixture, then coat them in the flour-cornmeal mixture.

Assemble the Po Boys

Build the Sandwich
Slice the French bread rolls lengthwise but not all the way through. Layer the fried protein on the bottom half, followed by the lettuce, tomato slices, onion, and pickles. Close the sandwich.
