Method

Preparing the Shrimp

    Boil the Water

    In a large pot, bring 4 quarts of water to a rolling boil.

    Add Salt and Lemon

    Once boiling, add 1 cup of salt and the halved lemons to the water.

    Cook the Shrimp

    Add the 2 pounds of jumbo shrimp to the boiling water. Stir gently and allow the shrimp to cook for 2-3 minutes, or until they turn pink and opaque.

    Add Old Bay Seasoning

    Sprinkle 3 tablespoons of Old Bay seasoning over the shrimp while they cook.

    Prepare Ice Bath

    In a large bowl, combine 12 cups of ice cubes and 2 quarts of cold water to create an ice bath.

    Shock the Shrimp

    Once cooked, immediately transfer the shrimp to the ice bath to stop the cooking process. Let them sit in the ice bath for about 5 minutes.

Making the Dipping Sauce

    Combine Ingredients

    In a small bowl, mix together 1 cup of mayonnaise, 2 tablespoons of hot sauce, and 1 tablespoon of lemon juice until well combined.

    Adjust to Taste

    Taste the dipping sauce and adjust the hot sauce or lemon juice according to your preference.

Serving

    Plate the Shrimp

    Remove the shrimp from the ice bath and drain them well. Arrange them on a serving platter.

    Serve with Dipping Sauce

    Serve the chilled shrimp with the dipping sauce on the side for dipping.
