Preparation of Oysters

Shuck the Oysters
Carefully shuck the oysters and place them on a baking sheet. Discard the top shell and keep the oyster in the bottom shell.

Sauté Spinach
In the same pan, add the garlic and sauté for 1 minute. Then add the fresh spinach and cook until wilted, about 3-4 minutes.

Combine Ingredients
Remove the pan from heat and stir in the sautéed shallots, breadcrumbs, Parmesan cheese, nutmeg, salt, and black pepper until well combined.
Hollandaise Sauce

Prepare the Sauce
In a heatproof bowl, whisk the egg yolks and lemon juice together until pale and thick. Gradually drizzle in the melted butter while whisking continuously until the sauce is smooth and creamy.

Season the Sauce
Add cayenne pepper to taste and adjust seasoning if needed.
Assembly and Baking

Assemble Oysters
Top each oyster with a generous spoonful of the spinach mixture. Drizzle with hollandaise sauce.

Bake
Preheat the oven to 450°F (230°C). Bake the oysters for about 10-12 minutes until the topping is golden and bubbly.
