Prepare the Stuffed Shrimp

Make the Crab Stuffing
In a mixing bowl, combine crabmeat, breadcrumbs, mayonnaise, chopped green onions, finely chopped celery, minced garlic, lemon juice, salt, black pepper, and paprika. Mix until well combined.

Stuff the Shrimp
Take each shrimp and carefully fill it with the crab stuffing mixture. Ensure the stuffing is compact and the shrimp are fully closed around the filling.

Fry the Shrimp
Heat oil in a frying pan over medium heat. Once hot, fry the stuffed shrimp for about 2-3 minutes on each side or until they are golden brown. Remove and drain on paper towels.
Prepare the Hollandaise Sauce

Melt Butter
In a small saucepan, melt the butter over low heat. Do not let it boil.

Combine and Whisk
Slowly drizzle in the melted butter while whisking continuously until the sauce thickens. Add salt and cayenne pepper to taste.

Cook Potatoes
Add diced potatoes to the pot along with vegetable broth, salt, and black pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.

Prepare the seasonal vegetable by steaming or sautéing until tender yet crisp. Season with salt and pepper to taste.
