Preparation

    Season the Filet Mignon

    In a small bowl, mix together the kosher salt, freshly ground black pepper, and garlic powder. Rub the steak on both sides with the seasoning mixture.

    Preheat the Grill or Pan

    Heat a grill or a heavy skillet over medium-high heat. Add olive oil and let it heat until shimmering, but not smoking.

Cooking

    Sear the Filet

    Place the seasoned filet mignon onto the hot grill or skillet. Sear for about 4-5 minutes on one side without moving it, until it develops a nice crust.

    Flip and Cook

    Flip the filet and cook for an additional 4-5 minutes for medium-rare, or until the desired doneness is achieved. Use a meat thermometer for accuracy: 130°F for medium-rare.

    Optional Butter Baste

    In the last minute of cooking, add a tablespoon of butter and a sprig of fresh rosemary to the pan, and spoon the melted butter over the filet for added flavor.

Resting and Serving

    Rest the Steak

    Remove the filet mignon from the heat and let it rest on a cutting board for about 5 minutes. This allows the juices to redistribute.
