This is a tried and true Cajun dish! We take rice, shrimp, crawfish and sausage that has been seasoned with authentic Cajun spices, and mix them all up in a bowl with a shot of vodka! A little on the hot side, not for the faint of heart or teetotalers!

    Prepare the Ingredients

    Chop the onion, green bell pepper, celery, and garlic. Slice the andouille sausage. Peel and devein the shrimp if necessary.

    Mix the Spices

    In a small bowl, combine the Cajun seasoning, crushed red pepper flakes, salt, and black pepper.

Cooking

    Sauté the Vegetables

    In a large pot or Dutch oven, heat a bit of oil over medium heat. Add the chopped onion, green bell pepper, celery, and garlic. Sauté until softened, about 5 minutes.

    Brown the Sausage

    Add the sliced andouille sausage to the pot and cook until browned, about 5-7 minutes.

    Add Rice and Spices

    Stir in the rice, spice mixture, and cook for another 1-2 minutes, allowing the rice to absorb the flavors.

    Pour in Broth and Vodka

    Pour in the chicken broth and vodka. Bring to a boil, then reduce heat to low, cover, and let simmer for about 20 minutes.

    Add Shrimp and Crawfish

    After 20 minutes, add the shrimp and crawfish to the pot. Stir gently and let cook for an additional 5-7 minutes, or until the shrimp are pink and cooked through.

Serving

    Garnish and Serve

    Remove from heat and let sit for 5 minutes. Fluff the jambalaya with a fork, then garnish with chopped green onions and parsley before serving.
