Method

Preparing the Stuffing

  1. 1

    Make the stuffing

In a mixing bowl, combine the softened cream cheese, cooked crab meat, chopped green onions, breadcrumbs, and Old Bay seasoning. Mix until well combined.

Preparing the Shrimp

  1. 2

    Stuff the shrimp

Carefully make a slit down the back of each shrimp. Fill each shrimp with about 1-2 tablespoons of the crab stuffing mixture.

  2. 3

    Marinate the shrimp

In a separate bowl, mix together olive oil, minced garlic, lemon juice, salt, and black pepper. Add the stuffed shrimp to the marinade and let sit for 15 minutes.

Grilling the Shrimp

  1. 4

    Preheat the grill

Preheat your grill to medium heat (about 350°F or 175°C).

  2. 5

    Grill the shrimp

Place the marinated stuffed shrimp on the grill and cook for about 3-4 minutes on each side, or until the shrimp are opaque and cooked through.

Preparing the Mashed Potatoes

  1. 6

    Boil the potatoes

In a large pot, add the peeled and cut potatoes. Cover with water, add a pinch of salt, and bring to a boil. Cook until the potatoes are fork-tender, about 15-20 minutes.

  2. 7

    Mash the potatoes

Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

Serving

  1. 8

    Plate the dish

On a serving plate, place a generous scoop of mashed potatoes and top with the grilled stuffed shrimp. Serve immediately.
