Marinate the Alligator Meat
In a bowl, combine the cubed alligator meat and buttermilk. Cover and refrigerate for at least 1 hour to tenderize and infuse flavor.

Prepare the Breading Mixture
In a separate bowl, mix together the cornmeal, all-purpose flour, Cajun seasoning, salt, and black pepper until well combined.

Beat the Eggs
In another bowl, beat the two large eggs until well mixed. This will be used to help the breading adhere to the alligator meat.

Heat the Oil
In a deep frying pan or pot, heat the cooking oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of breading into it; if it sizzles, the oil is ready.

Dredge the Alligator Bites
Remove the marinated alligator meat from the refrigerator. Dip each piece into the beaten eggs, ensuring it is fully coated, then dredge it in the breading mixture. Press lightly to ensure the coating sticks.

Fry the Gator Bites
Carefully place the breaded alligator bites into the hot oil in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes or until they are golden brown and crispy.

Drain and Serve
Using a slotted spoon, remove the fried gator bites and place them on a plate lined with paper towels to drain excess oil. Serve immediately while hot.
