Crawfish Breading

Dipping Sauces

Method

Preparation

  1. 1

    Prepare the Crawfish

Thaw the crawfish tails if they are frozen. Drain and pat dry with paper towels to remove excess moisture.

  2. 2

    Make the Breading Mixture

In a large bowl, combine the all-purpose flour, cornmeal, paprika, garlic powder, onion powder, salt, and black pepper. Mix well.

  3. 3

    Prepare the Wet Mixture

In another bowl, whisk together the eggs and milk until well combined.

Breading and Frying

  1. 4

    Breading the Crawfish

Dip each crawfish tail into the wet mixture, allowing excess to drip off. Then, dredge in the dry mixture, ensuring they are fully coated.

  2. 5

    Heat the Oil

In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  3. 6

    Fry the Crawfish

Carefully add the breaded crawfish tails to the hot oil in batches. Fry for about 3-4 minutes or until golden brown and crispy. Avoid overcrowding the pan.

  4. 7

    Drain and Serve

Using a slotted spoon, transfer the fried crawfish to a plate lined with paper towels to drain excess oil. Serve hot with ranch dressing or cocktail sauce.
