Tacos

    Prepare the Fish

    Season the whitefish fillets with cumin, salt, and pepper. Heat olive oil in a skillet over medium heat. Once hot, add the fish and cook for 3-4 minutes on each side or until the fish flakes easily with a fork.

    Warm the Tortillas

    In a separate pan, warm the corn tortillas over medium heat for about 30 seconds on each side until soft. Keep them warm in a cloth or tortilla warmer.

Panama Sauce

    Make the Sauce

    In a bowl, combine mayonnaise, lime juice, hot sauce, and garlic powder. Mix well until smooth and creamy. Adjust seasoning to taste.

Pico de Gallo

    Prepare the Pico de Gallo

    Chop the tomatoes, onion, and cilantro finely. In a bowl, combine the chopped ingredients, lime juice, and salt. Stir to combine and let it sit for 10 minutes to allow the flavors to meld.

Slaw

    Make the Slaw

    Shred the green cabbage and carrot. In a bowl, mix the shredded cabbage and carrot with lime juice and salt. Toss to combine and let it sit for 10 minutes.

Assembling the Tacos

    Assemble the Tacos

    On each warm tortilla, place a portion of the cooked fish, drizzle with Panama sauce, and top with pico de gallo and slaw. Serve immediately.
