Fresh Fish Preparation

Method

Fresh Fish Preparation

  1. 1

    Season the Fish

In a bowl, combine olive oil, lemon juice, garlic powder, paprika, salt, and black pepper. Coat the fresh fish fillets in this mixture and let it marinate for at least 30 minutes.

  2. 2

    Cooking Options

You can choose to fry, blacken, or grill the fish. For frying, heat oil in a skillet; for blackening, use a cast iron skillet on high heat; for grilling, preheat the grill.

Hushpuppies

  1. 3

    Prepare the Batter

In a large bowl, mix cornmeal, flour, baking powder, sugar, and salt. In another bowl, whisk together buttermilk and egg. Combine wet and dry ingredients until just blended. Stir in chopped onion.

  2. 4

    Fry the Hushpuppies

Heat vegetable oil in a deep frying pan over medium heat. Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.

Coleslaw

  1. 5

    Mix the Coleslaw

In a large bowl, combine shredded cabbage, grated carrots, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Toss well to combine and refrigerate for at least 30 minutes before serving.

Fries

  1. 6

    Prepare the Fries

Cut potatoes into fry shapes. Rinse in cold water and pat dry. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).

  2. 7

    Fry the Potatoes

Carefully add the fries to the hot oil in batches, frying until golden and crispy, about 5-7 minutes. Remove and drain on paper towels, sprinkling with salt immediately.
