Prepare the Chicken
Flatten the chicken breasts to an even thickness using a meat mallet or rolling pin.

Bread the Chicken
Dredge each chicken breast in flour, dip in the beaten eggs, then coat with breadcrumbs.

Fry the Chicken
In a large skillet, heat olive oil over medium heat. Fry the breaded chicken breasts for 5-7 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

Assemble the Sandwich
Toast the sandwich buns lightly, then place the fried chicken on the bottom half, top with cheese, lettuce, tomato slices, pickles, and onion slices. Cover with the top half of the bun.

Prepare the Potatoes
Peel and cut the potatoes into thin strips for fries.

Soak the Potatoes
Soak the cut potatoes in water for at least 30 minutes to remove excess starch.

Preheat the oven to 425°F (220°C).

Spread the potatoes in a single layer on a baking sheet and bake for 25-30 minutes until crispy and golden, flipping halfway through.
