Method

Chicken Preparation

  1. 1

    Preheat Grill

Preheat the grill to medium-high heat.

  2. 2

    Season Chicken

Rub the chicken breasts with olive oil, salt, and black pepper.

  3. 3

    Grill Chicken

Grill the chicken breasts for about 6-7 minutes on each side or until fully cooked and internal temperature reaches 165°F (75°C).

Topping Preparation

  1. 4

    Prepare Sausage

While the chicken is grilling, slice the Alabama Conecuh sausage into rounds.

  2. 5

    Cook Sausage

In a skillet, cook the sausage over medium heat until browned, about 5-7 minutes. Remove from heat and set aside.

  3. 6

    Sauté Crawfish

In the same skillet, add the crawfish tails and sauté for 2-3 minutes until heated through.

Cream Sauce Preparation

  1. 7

    Melt Butter

In a saucepan, melt the butter over medium heat.

  2. 8

    Sauté Garlic

Add the minced garlic and sauté for 1 minute until fragrant.

  3. 9

    Add Cream

Pour in the heavy cream and stir well. Bring to a gentle simmer.

  4. 10

    Make Sauce

Stir in the grated Parmesan cheese, Cajun seasoning, salt, and black pepper. Cook for an additional 2-3 minutes until the sauce thickens.

Assembly

  1. 11

    Plate Chicken

Once the chicken is grilled, place each chicken breast on a serving plate.

  2. 12

    Add Toppings

Top each chicken breast with the cooked sausage and crawfish tails.

  3. 13

    Add Cream Sauce

Drizzle the New Orleans style cream sauce generously over the top.

  4. 14

    Garnish

Sprinkle additional pepper jack cheese on top if desired.
