Method

Preparation of Steak

    Tenderize the Steak

    Using a meat mallet, pound the top sirloin pieces to about 1/2 inch thickness. Season both sides generously with salt and black pepper.

    Prepare Breading Stations

    Set up a breading station: place all-purpose flour in one shallow dish, whisk eggs and milk together in a second shallow dish, and place bread crumbs in a third shallow dish.

Breading the Steak

    Bread the Steak

    Coat each piece of the seasoned steak in flour, shaking off the excess. Then dip into the egg mixture, allowing the excess to drip off. Finally, coat in bread crumbs, pressing gently to ensure the crumbs adhere.

Cooking the Steak

    Fry the Steak

    In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the breaded steaks to the skillet. Fry for about 3-4 minutes on each side or until golden brown and cooked through. Remove and place on paper towels to drain excess oil.

Making the Gravy

    Prepare the Gravy

    In the same skillet used for frying, reduce heat to medium and add butter. Once melted, whisk in the all-purpose flour until golden brown. Gradually add milk while whisking to avoid lumps. Bring to a simmer and season with salt and black pepper. Cook until thickened, about 5-7 minutes.

Serving

    Place the fried steak on a plate and generously pour the cream gravy over the top. Serve immediately.
