Method

Crust Preparation

    Prepare the crust

    Preheat the oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly moistened.

    Form the crust

    Press the mixture firmly into the bottom of a 9-inch springform pan. Use the back of a measuring cup to ensure an even layer. Bake for 8-10 minutes until lightly golden. Remove from the oven and let cool.

Filling Preparation

    Mix the filling

    In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the granulated sugar and continue to beat until well combined.

    Add remaining ingredients

    Mix in the vanilla extract and sour cream until fully incorporated. Add the eggs one at a time, mixing on low speed until just combined after each addition. Do not overmix.

    Pour filling into crust

    Pour the cheesecake filling over the cooled crust in the springform pan, smoothing the top with a spatula.

Baking and Cooling

    Bake the cheesecake

    Bake in the preheated oven for 50-60 minutes or until the center is set and only slightly jiggly. Turn off the oven and crack the door, letting the cheesecake cool in the oven for 1 hour.

    Cool completely

    Remove the cheesecake from the oven and let it cool to room temperature. Cover and refrigerate for at least 4 hours, preferably overnight.

Topping Preparation

    Prepare toppings (optional)

    If using strawberries, slice them just before serving. For the chocolate liqueur sauce, you can heat the Godiva liqueur in a small saucepan over low heat until warm.

    Serve

    Once the cheesecake is chilled, remove it from the springform pan. If desired, top with sliced strawberries or drizzle with Godiva liqueur sauce and sprinkle with chopped pecans before serving.
