Method
Preparing the Catfish

Season the Catfish
Pat the catfish fillets dry with a paper towel. Rub each fillet with blackening seasoning on both sides.

Cook the Catfish
In a large skillet, heat olive oil over medium-high heat. Once hot, add the seasoned catfish fillets and cook for 4-5 minutes on each side, or until the fish is blackened and cooked through. Remove from skillet and set aside.

Prepare the Sauce
Pour in the heavy cream, stirring constantly. Bring to a simmer and gradually add the grated Parmesan cheese, continuing to stir until the cheese is melted and the sauce is smooth. Add lemon juice, salt, and black pepper, mixing well.

Plate the Dish
Place the blackened catfish fillets on a serving plate. Spoon the cream sauce generously over the fillets and top with the sautéed shrimp.
