Catfish Preparation

Prepare the Catfish
Rinse the catfish fillets under cold water and pat them dry with a paper towel.

Marinate the Fillets
In a bowl, mix olive oil, salt, black pepper, paprika, cayenne pepper, garlic powder, and lemon juice. Coat the catfish fillets in this marinade and let them sit for at least 15 minutes.

Blacken the Catfish
Preheat a cast-iron skillet over high heat. Coat both sides of the marinated catfish fillets with blackening seasoning. Add a little oil to the skillet and carefully place the fillets in the hot skillet. Cook for about 3-4 minutes on each side until blackened and cooked through.
Fried Option

Prepare for Frying
Soak the marinated catfish fillets in buttermilk for about 10 minutes before dredging.

Dredge the Catfish
In a shallow dish, place the cornmeal. Remove the fillets from the buttermilk and dredge in the cornmeal until well coated.

Heat the Oil
In a large frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Catfish
Carefully place the cornmeal-coated fillets in the hot oil. Fry for about 4-5 minutes on each side or until golden brown and crispy. Remove and drain on paper towels.
