Fish Fillet

    Prepare the Fish

    In a bowl, combine olive oil, lemon juice, garlic powder, salt, and black pepper. Marinate the fish fillets in this mixture for at least 30 minutes.

    Grill the Fish

    Preheat the grill to medium-high heat. Grill the marinated fish fillets for about 4-5 minutes on each side or until cooked through and flaky.

Grilled Shrimp

    Prepare the Shrimp

    In another bowl, combine shrimp with paprika, cayenne pepper, olive oil, and minced garlic. Let it marinate for about 15 minutes.

    Grill the Shrimp

    On the same grill, cook the marinated shrimp for about 2-3 minutes on each side or until they turn pink and opaque.

Hollandaise Sauce

    Prepare the Sauce

    In a stainless-steel bowl, whisk together egg yolks and lemon juice. Place the bowl over a pot of simmering water (double boiler) and whisk vigorously until the mixture thickens.

    Finish the Sauce

    Slowly drizzle in the melted butter while whisking continuously until the sauce is smooth and creamy. Season with salt and black pepper to taste.

Braised Potatoes

    Cook the Potatoes

    In a pot, heat olive oil over medium heat. Add halved baby potatoes and sauté for about 5 minutes, stirring occasionally.

    Add Broth and Season

    Pour in the vegetable broth, add rosemary, salt, and black pepper. Cover and let simmer for about 15-20 minutes or until the potatoes are tender.

    Sauté the Vegetables

    In a pan, heat olive oil over medium heat. Add the seasonal vegetables and sauté for about 5-7 minutes until they are tender but still crisp.

    Season the Vegetables

    Season the sautéed vegetables with salt and black pepper to taste.
