Preparing the Potatoes

    Bake the Potatoes

    Preheat the oven to 400°F (200°C). Scrub the potatoes clean under running water. Prick each potato several times with a fork to allow steam to escape. Rub each potato with olive oil and sprinkle with salt and black pepper. Place the potatoes directly on the oven rack and bake for 45-60 minutes or until tender when pierced with a fork.

    Cool and Scoop

    Once the potatoes are baked, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise. Use a spoon to carefully scoop out most of the flesh, leaving a small border around the edges to maintain the potato's shape. Place the scooped potato flesh in a mixing bowl.

Making the Cajun Filling

    Cook the Sausage

    In a large skillet over medium heat, add the ground sausage. Cook until browned and fully cooked, breaking it apart with a spatula, about 7-10 minutes. Remove the sausage from the skillet and set aside, draining excess fat if necessary.

    Sauté the Vegetables

    In the same skillet, add diced green bell pepper, onion, celery, and minced garlic. Sauté for 5-7 minutes until the vegetables are softened and fragrant.

    Combine Filling Ingredients

    In the bowl with the scooped potato flesh, add the cooked sausage, sautéed vegetables, Cajun seasoning, cooked rice, shredded cheese, and chopped green onions. Mix until well combined.

Stuffing and Baking

    Stuff the Potatoes

    Spoon the Cajun filling mixture into each potato half, pressing down gently to pack it in. Top with additional cheese if desired.

    Bake Again

    Place the stuffed potatoes on a baking sheet and return them to the oven. Bake at 375°F (190°C) for an additional 15-20 minutes, or until the cheese is melted and bubbly.

    Serve

    Remove the stuffed potatoes from the oven and let them cool slightly before serving. Garnish with extra green onions if desired.
