Prepare the Ingredients
Chop the bell pepper, onion, and celery into small pieces. Slice the Andouille sausage into rounds. Mince the garlic cloves.

Measure the Rice
Measure 1 cup of long-grain white rice and rinse it under cold water until the water runs clear. Set aside.
Cooking

Sauté the Vegetables and Sausage
In a large skillet, heat a tablespoon of oil over medium heat. Add the chopped bell pepper, onion, and celery. Sauté for about 5 minutes until the vegetables are softened. Add the sliced Andouille sausage and minced garlic, cooking for an additional 2-3 minutes until the sausage is browned.

Add Rice and Broth
Stir in the rinsed rice, chicken broth, Cajun seasoning, thyme, bay leaf, salt, and black pepper. Bring to a boil.

Simmer
Once boiling, reduce the heat to low. Cover the skillet with a lid and let it simmer for about 20 minutes, or until the rice is cooked and has absorbed the liquid. Do not lift the lid during this time.

Remove Bay Leaf
After 20 minutes, remove the skillet from heat. Take out the bay leaf and discard it.

Fluff the rice with a fork. Garnish with sliced green onions and chopped parsley before serving.
