Preparing Broccoli

    Blanch the Broccoli

    Bring a large pot of salted water to a boil. Add the broccoli florets and cook for about 3 minutes until bright green and tender-crisp. Remove the broccoli and immediately plunge it into an ice bath to stop the cooking process. Drain and set aside.

Making Hollandaise Sauce

    Prepare the Double Boiler

    Fill a pot with a couple of inches of water and bring to a simmer. Reduce the heat to low, ensuring the water does not touch the bottom of the bowl.

    Combine Ingredients

    In a heatproof bowl, whisk together the egg yolks, lemon juice, and Dijon mustard until pale and slightly thickened.

    Cook the Sauce

    Place the bowl over the simmering water. Gradually whisk in the melted butter, a little at a time, until the sauce is thick and creamy. Remove from heat.

    Add salt and a pinch of cayenne pepper to taste, mixing well to combine.

Combining and Serving

    Arrange the blanched broccoli florets on a serving plate. Drizzle the warm hollandaise sauce generously over the broccoli.
