Prepare the Ingredients
Chop the smoked brisket into bite-sized pieces. Grate the pepper jack and cheddar cheeses if not pre-grated. Set aside.
Assembling the Nachos

Layer the Nachos
Preheat your oven to 350°F (175°C). Spread a layer of tortilla chips on a large baking sheet.

Add the Brisket
Evenly distribute the chopped smoked brisket over the tortilla chips.

Add the Cheese
Sprinkle the grated pepper jack and cheddar cheeses generously over the brisket.
Baking

Melt the Cheese
Place the baking sheet in the preheated oven and bake for about 10-15 minutes, or until the cheese is melted and bubbly.

Add Toppings
Remove the nachos from the oven and top with dollops of guacamole, sour cream, and jalapeños as desired.
