Preparing the Spicy Mayo

Mix the Ingredients
In a small bowl, combine mayonnaise, hot sauce, garlic powder, paprika, and salt. Mix well until smooth and set aside.
Grilling the Boudin

Preheat the Grill
Preheat your grill to medium heat (about 350°F or 175°C).

Add the Cheese
During the last 2 minutes of grilling, place a slice of pepper jack cheese on each boudin sausage to melt.
Assembling the Burger

Prepare the Buns
Toast the burger buns on the grill for about 1-2 minutes until golden brown.

Layer the Ingredients
On the bottom half of each toasted bun, place a leaf of lettuce. Then, add the grilled boudin with melted cheese, followed by a slice of tomato, pickles, and red onion.

Finish with Spicy Mayo
Spread a generous amount of spicy mayo over the top half of the bun and place it on top of the assembled ingredients.
