Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water (about 110°F/43°C) and active dry yeast. Let it sit for about 5-10 minutes until frothy.

    Mix Wet Ingredients

    In a separate bowl, warm the milk and melt the butter together. Add the eggs and vanilla extract to the mixture, whisking until combined.

    Combine Ingredients

    In a large mixing bowl, combine the flour, sugar, and salt. Make a well in the center and pour in the activated yeast mixture and the milk mixture. Stir until a dough forms.

    Knead the Dough

    Turn the dough out onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

    First Rise

    Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm place for about 1-2 hours, or until doubled in size.

Frying and Serving

    Prepare Oil

    In a deep pot or fryer, heat vegetable oil to 350°F (175°C). Use a thermometer to ensure the right temperature for frying.

    Shape Beignets

    Once the dough has risen, punch it down, and roll it out to about 1/4 inch thick. Cut into squares or rectangles, about 2-3 inches wide.

    Fry Beignets

    Carefully drop the dough pieces into the hot oil, frying in batches to avoid overcrowding. Fry each side for about 2-3 minutes or until golden brown.

    Drain and Dust

    Remove the beignets with a slotted spoon and drain on paper towels. While still warm, dust generously with powdered sugar.
