Sauté Vegetables
In a large skillet, melt the butter over medium heat. Add the diced onion, bell pepper, and celery. Sauté for about 5-7 minutes until the vegetables are tender.

Add Garlic and Crawfish
Stir in the minced garlic and sauté for an additional 1-2 minutes. Then, add the crawfish tails and cook for about 3-4 minutes until heated through.

Make the Roux
Sprinkle the flour over the mixture and stir well to combine. Cook for 2 minutes, stirring constantly, until the mixture is slightly thickened.

Add Broth and Seasoning
Slowly add the chicken broth while stirring to prevent lumps. Then, add the Cajun seasoning. Bring the mixture to a simmer and let it cook for about 15 minutes, stirring occasionally.

Finish the Etouffee
Once the sauce has thickened, stir in the sliced green onions and chopped parsley. Cook for an additional 2 minutes, then remove from heat.
Assembly

Serve
Place a grilled fish fillet on each plate and generously top with the crawfish etouffee. Serve hot, garnished with additional parsley if desired.
