Prepare the Fillings

Cooking Brisket
Season brisket with salt and pepper. In a slow cooker, cook on low for 8 hours or until tender. Shred brisket with two forks.

Preparing Blackened Gator
Season gator meat with blackening seasoning. Heat a cast-iron skillet until very hot, add gator and sear for about 3-4 minutes on each side until cooked through.

Cooking Blackened Fish
Coat fish fillets with blackening seasoning. In a hot skillet, cook fish for 3-4 minutes on each side until the fish flakes easily with a fork.
Assemble the Tacos

Warm the Tortillas
Heat corn tortillas in a dry skillet over medium heat for about 30 seconds on each side until warm and pliable.

Fill the Tacos
Place your choice of filling (shrimp, brisket, blackened gator, or blackened fish) in the center of each tortilla. Top with a drizzle of Panama sauce, a generous scoop of Pico de Gallo, and a sprinkle of pepper jack cheese.
