Prepare the Fish or Shrimp
In a bowl, soak the catfish fillets or shrimp in buttermilk for at least 30 minutes to tenderize and flavor.

Prepare the Breading
In a separate bowl, mix cornmeal, all-purpose flour, cayenne pepper, salt, and black pepper.

Bread the Fish or Shrimp
Remove the fish or shrimp from the buttermilk, allowing excess to drip off, then dredge them in the cornmeal mixture, ensuring they are fully coated.

Fry the Fish or Shrimp
Heat oil in a deep pan over medium heat. Fry the breaded fish or shrimp for about 3-5 minutes or until golden brown. Remove and drain on paper towels.

Assemble the Po'Boy
Slice the baguette in half. Spread mayonnaise and hot sauce inside, then layer lettuce, tomato slices, and fried catfish or shrimp. Close the sandwich.

Prepare the Potatoes
Wash and peel the potatoes. Cut them into thin fries.

Heat the Oil
In a deep frying pan or pot, heat vegetable oil over medium-high heat until it reaches 180°C (350°F).

Fry the Potatoes
Carefully add the potato fries in batches to the hot oil. Fry for about 4-6 minutes or until golden brown. Remove and drain on paper towels.

While the fries are still hot, sprinkle with salt to taste.
