Crispy Cheddar Grit Cake

Broccolini

Method

Preparation of Wild Game

  1. 1

    Prepare the Game

Season the venison, elk, and quail with salt and black pepper. Preheat your grill to medium-high heat.

  2. 2

    Grill the Game

Grill the venison and elk for about 4-5 minutes per side for medium-rare, and grill the quail for 3-4 minutes per side until cooked through.

Crispy Cheddar Grit Cake

  1. 3

    Cook the Grits

Bring water to a boil in a saucepan. Add grits, reduce heat, and simmer for 20 minutes, stirring occasionally until thickened. Stir in butter, cheese, and egg. Season with salt and pepper.

  2. 4

    Form the Cakes

Spread the mixture into a greased baking dish and let it cool. Once cooled, cut into cakes.

  3. 5

    Fry the Cakes

In a skillet, heat oil over medium heat and fry the grit cakes until golden and crispy on both sides.

Prepare Broccolini

  1. 6

    Sauté Broccolini

In a skillet, heat olive oil over medium heat, add garlic and sauté for 1 minute. Add broccolini and sauté for 5-7 minutes until tender. Season with salt.

Game Sauce

  1. 7

    Make the Sauce

In a saucepan, combine red wine, game stock, and shallots. Simmer until reduced by half, then whisk in butter and thyme. Season with salt.

Assembly

  1. 8

    Plate the Dish

On a plate, arrange the grilled game, crispy cheddar grit cake, and sautéed broccolini. Drizzle with game sauce before serving.
