Tempura Lobster Bites
Method
Preparation Instructions
- 1
Prepare the Lobster
Begin by boiling the lobster tails in salted water for about 5-7 minutes until cooked through. Once cooked, remove from water and let cool before removing the meat from the shells. Cut the lobster meat into bite-sized pieces.
- 2
Make the Tempura Batter
In a mixing bowl, combine the tempura batter mix with cold water until just combined. Be careful not to overmix; some lumps are okay for a light tempura texture.
- 3
Heat the Oil
In a deep saucepan or fryer, heat the vegetable oil to 350°F (175°C) over medium heat.
- 4
Fry the Lobster Bites
Once the oil is hot, dip each lobster piece into the tempura batter, allowing excess batter to drip off. Carefully place the battered lobster into the hot oil. Fry in batches for about 2-3 minutes or until golden brown. Remove and place on paper towels to drain excess oil. Sprinkle with sea salt.
