Preparation and Assembly

  1. 1

    Prepare the Mushroom Filling

Preheat the oven to 400°F (200°C). In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the wild mushrooms, thyme, salt, and pepper. Cook until the mushrooms are tender and any moisture has evaporated, approximately 5-7 minutes. Remove from heat and let cool slightly.

  2. 2

    Mix the Cheese

In a mixing bowl, combine the sautéed mushrooms with cream cheese and half of the grated parmesan cheese. Stir until well blended.

  3. 3

    Prepare the Phyllo Cups

While the filling is cooling, lay out the phyllo pastry sheets. Brush each sheet lightly with melted butter and stack them for a total of 4 layers. Cut the stacked sheets into squares (about 4x4 inches). Press each square into a greased muffin tin to form cups.

  4. 4

    Fill and Bake

Spoon the mushroom and cheese filling into each phyllo cup. Sprinkle the remaining parmesan cheese on top. Bake in the preheated oven for about 15-20 minutes or until the phyllo is golden brown and crispy.

  5. 5

    Serve

Remove from the oven and let cool slightly before serving. Enjoy warm as an appetizer!
