1. Prepare the Coffee Rub

In a small bowl, combine piñon coffee, olive oil, salt, and black pepper to create a rub.

2. Rub the Elk Chops

Generously rub the elk chops with the coffee mixture and let them marinate for at least 30 minutes.

3. Prepare the Potatoes

Boil the potatoes in salted water until fork-tender. Drain and mash with goat cheese and roasted green chiles. Adjust seasoning to taste.
