Cook Lentils
In a medium saucepan, combine the lentils and vegetable broth. Bring to a boil, then reduce the heat to low. Cover and simmer for about 20-25 minutes, or until the lentils are tender and the liquid is absorbed.

Sauté Vegetables
In a skillet, heat a tablespoon of oil over medium heat. Add the diced onion and sauté for 3-4 minutes until it becomes translucent. Add the minced garlic and cook for another minute until fragrant.

Combine and Season
Once the lentils are cooked, add them to the skillet with the sautéed onion and garlic. Stir in the cumin, smoked paprika, salt, and black pepper. Cook for another 5-7 minutes, stirring occasionally, until everything is well combined and heated through.

In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side, until pliable.

Serve the tacos with lime wedges on the side for squeezing over the top before eating.
