Preheat your oven to 400°F (200°C). Trim the ends of the Brussels sprouts and remove any yellow or damaged leaves. Cut the larger sprouts in half to ensure even cooking.

In a large bowl, toss the trimmed Brussels sprouts with olive oil, salt, and black pepper until they are evenly coated.

Roast the Brussels Sprouts
Spread the seasoned Brussels sprouts in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 20-25 minutes or until they are crispy and golden brown, stirring halfway through to ensure even cooking.

Prepare the Sweet Chili Sauce
In a small saucepan over medium heat, combine the sweet chili sauce, minced garlic, lime juice, and soy sauce. Stir well and let it simmer for about 5 minutes until heated through and slightly thickened.

Toss the Brussels Sprouts in Sauce
Once the Brussels sprouts are roasted, remove them from the oven and transfer them to a large bowl. Pour the sweet chili sauce over the hot Brussels sprouts and toss gently to coat.
