Bruschetta Topping

Prepare the Tomatoes
Dice the ripe tomatoes into small pieces and place them in a bowl.

Add Basil and Garlic
Chop the fresh basil leaves and mince the garlic cloves. Add both to the bowl with the tomatoes.

Whipped Goat Cheese

Blend the Cheeses
In a food processor, combine the goat cheese and cream cheese. Blend until smooth and creamy.

Add Flavorings
Add honey, lemon juice, and salt to the cheese mixture. Blend again until well combined and creamy.

Taste and Adjust
Taste the whipped goat cheese and adjust the salt if needed. Set aside.
Toast

Preheat the Oven
Preheat your oven to 400°F (200°C).

Slice the Baguette
Slice the baguette into 1/2 inch thick slices.

Brush with Olive Oil
Place the slices on a baking sheet and brush both sides lightly with extra virgin olive oil.

Toast the Bread
Toast in the preheated oven for about 5-7 minutes, or until golden and crispy. Remove from the oven.

Spread a generous amount of the whipped goat cheese on each toasted slice of baguette.

Spoon the marinated tomato mixture on top of the goat cheese.
