Chocolate Mousse Base
Melt the Chocolate
In a heatproof bowl, combine the dark chocolate and unsalted butter. Set the bowl over a pan of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let it cool slightly.
Prepare the Egg Mixture
In a separate bowl, whisk together the large eggs, granulated sugar, vanilla extract, and a pinch of salt until the mixture is pale and slightly thickened.
Combine Mixtures
Gradually pour the melted chocolate mixture into the egg mixture, stirring gently to combine until fully incorporated.
Chill the Mousse
Spoon the mousse into serving dishes or cups and refrigerate for at least 2 hours or until set.
Whipped Cream Topping
Whip the Cream
In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, whip until soft peaks form.
Serve
Once the mousse is set, top with the whipped cream before serving. You can decorate it with chocolate shavings or fresh berries if desired.
