Garlic Mashed Potatoes

    Prepare the Steak

    Take the filet mignon and pat it dry with paper towels. Season it with the fall spice rub, salt, and black pepper on all sides.

    Sear the Steak

    Heat olive oil in a skillet over medium-high heat. Once hot, add the filet and sear for about 4-5 minutes on each side for medium-rare, or adjust the time based on your preferred doneness.

    Rest the Steak

    Remove the steak from the skillet and let it rest for 5 minutes before slicing.

Garlic Mashed Potatoes

    Prepare the Potatoes

    Peel the russet potatoes and cut them into quarters. Place them in a pot of salted boiling water and cook until tender, about 15 minutes.

    Cook the Garlic

    In the last 5 minutes of cooking the potatoes, add the garlic cloves to the pot. Once the potatoes are tender, drain and return to the pot.

    Mash the Potatoes

    Add butter, heavy cream, salt, and black pepper to the drained potatoes and garlic. Mash until smooth and creamy. Adjust seasoning to taste.

Demi Glace

    Sauté the Shallots

    In a saucepan, melt the butter over medium heat. Add the chopped shallots and cook until translucent, about 3-4 minutes.

    Add Liquids

    Pour in the red wine and beef stock. Add thyme and bring to a boil. Reduce heat and simmer until reduced by half, about 20-25 minutes.

    Finish the Sauce

    Strain the sauce to remove solids and return to the saucepan. Season with salt and black pepper to taste. Keep warm.
