    Prepare the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Add 1 cup of grits and 1 tsp of salt. Reduce the heat, cover, and simmer for about 20-25 minutes, stirring occasionally until thickened.

    Add Cheese and Butter

    Once the grits are cooked, remove from heat and stir in 1 cup of Marsh Hen Gouda cheese and 2 tbs of butter until melted and creamy. Keep warm.

Shrimp

    Sauté the Shrimp

    In a large skillet, heat 2 tbs of olive oil over medium-high heat. Add minced garlic and sauté for about 1 minute until fragrant.

    Season the Shrimp

    Add peeled and deveined Gulf shrimp to the skillet. Sprinkle with Cajun seasoning and lemon juice. Cook for about 3-5 minutes until the shrimp are pink and cooked through. Remove from heat and set aside.

Creole Cream Sauce

    Make the Roux

    In the same skillet, melt 2 tbs of butter over medium heat. Whisk in 2 tbs of all-purpose flour, stirring continuously for about 2-3 minutes until the mixture is golden brown.

    Add Cream and Broth

    Gradually whisk in 1 cup of heavy cream and 1 cup of chicken broth. Bring to a simmer and cook for about 5 minutes until slightly thickened.

    Season the Sauce

    Stir in 1 tsp of Creole seasoning, 1 tsp of salt, and 1 tsp of black pepper. Add chopped green onions and mix well.
