Short Rib

    Prepare the Short Ribs

    Preheat your oven to 325°F (160°C). Season the short ribs generously with salt and black pepper on all sides.

    Sear the Ribs

    In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat. Add the short ribs and sear them for about 3-4 minutes on each side until browned. Remove the ribs and set aside.

    Sauté the Vegetables

    In the same pot, add chopped onions, carrots, and celery. Sauté for 5-7 minutes until softened. Add the minced garlic and sauté for an additional minute until fragrant.

    Deglaze the Pot

    Pour in the red wine, scraping the bottom of the pot to get all the flavorful bits. Bring to a simmer and let it reduce for about 5 minutes.

    Braise the Ribs

    Return the short ribs to the pot. Add the beef broth, thyme, and bay leaves. Bring the mixture to a simmer, cover the pot, and transfer it to the preheated oven. Braise for 2.5 to 3 hours until the meat is tender and falling off the bone.

    Cook the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Stir in 1 cup of grits and 1 tsp of salt. Reduce heat to low and cook, stirring occasionally, for about 20-25 minutes or until the grits are creamy.

    Add Cheese and Butter

    Once the grits are cooked, remove from heat and stir in the grated Marsh Hen Gouda cheese and butter until melted and well combined. Season with black pepper to taste.
