Prepare Pasta Shells

Cook the Pasta
In a large pot of salted boiling water, cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside.
Make Sausage and Cheese Filling

Cook the Sausage
In a skillet over medium heat, cook the Italian sausage until browned and fully cooked. Break it apart with a spatula as it cooks. Drain excess fat.

Mix Filling Ingredients
In a large bowl, combine the cooked sausage, ricotta cheese, shredded mozzarella, grated Parmesan, chopped parsley, minced garlic, black pepper, and salt. Mix until well combined.
Prepare Bolognese Sauce

Cook Ground Beef
Add the ground beef to the saucepan and cook until browned. Drain excess fat.

Add Tomatoes and Seasonings
Stir in the canned crushed tomatoes, dried oregano, dried basil, sugar, red wine, bay leaf, and salt and pepper to taste. Bring to a simmer and let cook for 20-25 minutes.
Assemble the Dish

Preheat Oven
Preheat your oven to 375°F (190°C).

Fill the Shells
Using a spoon, fill each cooked pasta shell with the sausage and cheese filling. Place the filled shells in a baking dish.

Add Bolognese Sauce
Pour the Bolognese sauce evenly over the stuffed shells.

Top with Cheese
Sprinkle the remaining shredded mozzarella and grated Parmesan cheese over the top.

Let it Cool
Remove from the oven and let the stuffed shells cool for a few minutes before serving.
