    Prepare the Quinoa

    Rinse 1 cup of quinoa under cold water. In a medium saucepan, combine the quinoa with 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and water is absorbed. Set aside to cool.

    Prepare the Radishes

    Wash and remove the tops and tails from 2 cups of radishes. Chop them into small pieces and set aside.

    Mash the Black Beans

    In a large mixing bowl, add the drained and rinsed black beans. Use a fork or a potato masher to mash them until mostly smooth, leaving some chunks for texture.

Mixing and Forming the Sliders

    Combine Ingredients

    To the bowl with black beans, add the cooked quinoa, chopped radishes, breadcrumbs, chili powder, cumin, garlic powder, salt, pepper, olive oil, and the egg. Mix everything together until well combined.

    Form Slider Patties

    Using your hands, form the mixture into small slider-sized patties, about 2 inches in diameter. You should be able to make approximately 12 patties.

    Heat a non-stick skillet over medium heat. Add a little olive oil if necessary. Cook the slider patties for about 4-5 minutes on each side, or until golden brown and heated through.

Assembly

    On each slider bun, place a lettuce leaf, a patty, a slice of tomato, a few slices of avocado, and a dollop of vegan mayonnaise. Top with the other half of the bun.
