Blackberry Balsamic Glaze

Preparing the Pork Tenderloin

Pat the pork tenderloin dry with paper towels. Season generously with salt and black pepper on all sides.

Sear the Pork
In a large skillet over medium-high heat, add olive oil. Once hot, add the pork tenderloin and sear for about 3-4 minutes on each side until browned.

Roast the Pork
Transfer the seared pork tenderloin to a preheated oven at 400°F (200°C) and roast for about 20-25 minutes or until the internal temperature reaches 145°F (63°C). Let it rest for 5-10 minutes before slicing.

Cook the Glaze
Bring the mixture to a simmer and cook for about 10-15 minutes, stirring occasionally, until the blackberries break down and the sauce thickens.

Strain the Glaze
Once thickened, strain the sauce through a fine-mesh sieve to remove seeds and solids, returning the smooth glaze to the pan.

Continue to cook the strained glaze for another 5 minutes until it reaches your desired consistency.
Serving the Dish

Slice the rested pork tenderloin into medallions and arrange them on a serving plate.

Drizzle the blackberry balsamic glaze over the sliced pork tenderloin. Garnish with additional thyme if desired.
