Pickling the Onions

    Prepare the Pickled Red Onion

    Thinly slice the red onion and place it in a jar. In a saucepan, combine apple cider vinegar, water, sugar, and salt. Bring to a simmer over medium heat while stirring until sugar dissolves. Pour the hot liquid over the onions, ensuring they are fully submerged. Let it cool to room temperature, then refrigerate for at least 1 hour.

    Fry the Feta

    Cut feta cheese into small cubes. Dredge the feta cubes in all-purpose flour. In a large skillet, heat olive oil over medium heat. Fry the floured feta until golden brown on all sides, about 2-3 minutes per side. Remove from the skillet and let drain on paper towels.

Salad Assembly

    Prepare the Salad Base

    Cut the cantaloupe into bite-sized cubes and thinly slice the radishes. In a large mixing bowl, combine the cantaloupe, radishes, and fresh mint leaves.

    In a small bowl, whisk together honey, olive oil, lemon juice, salt, and pepper to taste. Adjust seasoning as needed.
