Method

Preparation of Kale

  1. 1

    Wash and Prepare Kale

Thoroughly wash the kale leaves under cold water. Remove the tough stems and tear the leaves into bite-sized pieces.

  2. 2

    Massage Kale

In a large bowl, add the torn kale pieces. Drizzle with a little olive oil (about 1 tsp) and sprinkle with a pinch of salt. Massage the kale leaves for 2-3 minutes until they become tender and slightly wilted.

Making the Dressing

  1. 3

    Prepare the Dressing

In a blender, combine garlic, anchovy fillets, Dijon mustard, Worcestershire sauce, lemon juice, olive oil, capers, salt, and black pepper. Blend until smooth and creamy.

Combining Ingredients

  1. 4

    Mix Salad

Pour the dressing over the massaged kale and toss well to ensure all leaves are evenly coated.

  2. 5

    Add Cornbread Crumble

Crumble the cornbread into small pieces and sprinkle over the salad. Toss lightly to distribute.

  3. 6

    Finish with Cheese

Grate or shave the Grana Padano cheese and sprinkle it generously over the top of the salad.

Serving

  1. 7

    Serve

Serve the Kale Caesar immediately as a fresh and healthy side dish or a light main course.
