    Prepare the Ingredients

    Start by peeling and deveining the shrimp. Cut the Andouille sausage into slices and dice the chicken thighs into bite-sized pieces. Chop the onion, green bell pepper, celery, and garlic. Slice the okra and set all the ingredients aside.

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, green bell pepper, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

    Add Garlic and Sausage

    Stir in the minced garlic and sliced sausage. Cook for an additional 3-4 minutes until the sausage is browned.

    Add Chicken

    Add the diced chicken thighs to the pot and cook for 5-6 minutes, stirring occasionally, until the chicken is no longer pink.

    Incorporate Broth and Spices

    Pour in the chicken broth and water. Add the Cajun seasoning, bay leaves, salt, black pepper, thyme, and paprika. Stir well to combine.

    Simmer the Gumbo

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 30 minutes, stirring occasionally.

    Add Okra and Shrimp

    After 30 minutes, add the sliced okra and shrimp to the pot. Cook for an additional 5-7 minutes until the shrimp are pink and cooked through.

    Final Seasoning

    Taste the gumbo and adjust the seasoning if necessary. Remove the bay leaves before serving.

Serving

    Serve the Gumbo

    Ladle the gumbo over cooked rice in bowls. Garnish with sliced green onions and chopped parsley to taste.
