Seasonal Vegetables

Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a bowl, mix olive oil, lemon juice, minced garlic, salt, black pepper, and chopped dill. Add the salmon fillets and coat them well. Let marinate for at least 30 minutes.

  2. 2

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F to 400°F).

  3. 3

    Grill the Salmon

Place the marinated salmon fillets directly on the grill. Grill for about 5-6 minutes on each side or until the salmon is cooked through and flakes easily with a fork.

Preparing the Seasonal Vegetables

  1. 4

    Chop the Vegetables

Slice the zucchini and bell peppers into strips. Trim the ends of the asparagus.

  2. 5

    Season the Vegetables

In a large bowl, toss the chopped zucchini, bell peppers, and asparagus with olive oil, salt, and black pepper until well coated.

  3. 6

    Grill the Vegetables

Place the seasoned vegetables on the grill alongside the salmon. Grill for about 10 minutes, turning occasionally, until they are tender and slightly charred.

Serving

  1. 7

    Plate the Dish

Once the salmon and vegetables are grilled, remove them from the grill and let them rest for a couple of minutes. Serve the grilled salmon alongside the seasonal vegetables on a plate.

  2. 8

    Garnish

Garnish with additional fresh dill and lemon wedges if desired.
