Preparation of Octopus

    Cleaning the Octopus

    If your octopus is fresh, rinse it under cold water. If it is frozen, thaw it completely in the refrigerator before use. Remove the beak and ink sac, if necessary.

    Boiling the Octopus

    In a large pot, bring salted water to a boil. Add the octopus and reduce the heat to a simmer. Cook for about 40-50 minutes until tender. You can test tenderness by piercing the thickest part of a tentacle with a knife.

    Cooling

    Once cooked, remove the octopus from the pot and let it cool for about 10-15 minutes. Once cool enough to handle, cut the tentacles off the body.

Marinating & Grilling

    Marinating the Octopus

    In a bowl, combine the olive oil, juice of 1 lemon, minced garlic, chopped parsley, sea salt, and black pepper. Toss the octopus tentacles in the marinade and let it sit for at least 30 minutes.

    Preparing the Grill

    Preheat your grill to medium-high heat. Brush the grill grates with oil to prevent sticking.

    Grilling

    Place the marinated octopus on the grill and cook for about 3-4 minutes per side until you see grill marks and the octopus is heated through.

    Serving

    Remove the grilled octopus from the grill and squeeze the juice of the remaining lemon over the top. Serve warm with additional parsley for garnish.
