Prepare the Batter
In a medium bowl, combine the all-purpose flour, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and free of lumps. Let it rest for about 15 minutes.

Heat the Oil
In a large heavy-bottomed pot or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Coat the Fish
Dip each fish fillet into the batter, ensuring it is fully coated. Allow any excess batter to drip off.

Fry the Fish
Carefully place the battered fish fillets into the hot oil, frying in batches if necessary to avoid overcrowding. Fry for 4-5 minutes or until golden brown and crispy. Remove and drain on paper towels.

Assemble the Sandwiches
Toast the burger buns lightly. On the bottom half of each bun, place a lettuce leaf followed by a piece of the fried fish. Top with a generous dollop of comeback sauce and place the top half of the bun on.

Serve immediately while hot, with extra sauce on the side if desired.
