Slow-Cooked Collards

    Prepare the Pork Chops

    Remove the pork chops from the refrigerator and let them sit at room temperature for about 30 minutes. This will help them grill evenly.

    Marinate the Chops

    In a bowl, mix olive oil, salt, black pepper, and garlic powder. Rub this mixture all over the pork chops, ensuring they are well coated. Place fresh rosemary on top of the chops.

    Grill the Chops

    Preheat the grill to medium-high heat. Grill the pork chops for about 6-7 minutes on each side or until the internal temperature reaches 145°F (63°C). Remove from the grill and let rest for 5 minutes before serving.

Slow-Cooked Collards

    Prepare the Collards

    Wash the collard greens thoroughly, removing tough stems. Tear the leaves into bite-sized pieces.

    Sauté the Aromatics

    In a large pot, heat a little olive oil over medium heat. Add the chopped onion and minced garlic. Sauté for about 5 minutes until the onion is soft and translucent.

    Cook the Collards

    Add the collard greens to the pot along with chicken broth, red pepper flakes, salt, and black pepper. Bring to a boil, then reduce heat to low. Cover and simmer for about 45 minutes until the collards are tender.

    Stir in apple cider vinegar just before serving for added flavor.

Spicy Salsa Macha

    Prepare the Chiles

    Remove stems and seeds from the dried chiles. Soak them in hot water for 15 minutes to soften.

    Blend the Salsa

    In a blender, combine the soaked chiles, garlic cloves, olive oil, and salt. Blend until smooth. Adjust the consistency with additional olive oil as needed.

    Finish the Salsa

    Stir in lime juice before serving. Taste and adjust seasoning if needed.
