    Boil the Eggs

    In a large pot, place the eggs and cover them with cold water. Bring the water to a boil over medium-high heat. Once boiling, cover the pot and remove it from heat. Let the eggs sit for 12-15 minutes.

    Cool the Eggs

    After the time has elapsed, transfer the eggs to a bowl of ice water to cool for at least 5 minutes. This helps to stop the cooking process and makes peeling easier.

    Peel the Eggs

    Once cooled, gently tap the eggs on a hard surface to crack the shells. Peel the eggs under running water to help remove the shells easily. Pat the eggs dry with a paper towel.

Filling Preparation

    Prepare the Filling

    Cut each egg in half lengthwise and gently scoop out the yolks into a mixing bowl. Add mayonnaise, Dijon mustard, sweet pickle relish, smoked paprika, salt, and black pepper to the yolks. Mash the mixture until smooth and creamy.

    Add Chives

    Chop the fresh chives and fold them into the yolk mixture, reserving a bit for garnish.

Assembly

    Fill the Egg Whites

    Using a spoon or piping bag, fill each egg white half with the yolk mixture.

    Sprinkle the filled eggs with smoked paprika and top with the reserved chopped chives for a fresh touch.
