Method

Fried Chicken

    Prepare Chicken

    Place chicken breasts between two pieces of plastic wrap and pound them to an even thickness of about 1/2 inch.

    Marinate Chicken

    Soak the chicken in buttermilk for at least 1 hour, preferably overnight, in the refrigerator.

    Prepare Dredging Mixture

    In a bowl, mix together flour, cornstarch, baking powder, salt, black pepper, garlic powder, and onion powder.

    Dredge Chicken

    Remove chicken from buttermilk and allow excess to drip off. Dredge each piece in the flour mixture, coating thoroughly.

    Fry Chicken

    Heat vegetable oil in a deep skillet or fryer over medium-high heat. Fry the chicken for about 5-7 minutes on each side or until golden brown and cooked through. Drain on paper towels.

House Pickles

    Prepare Cucumbers

    Slice cucumber into thin rounds.

    Make Pickling Brine

    In a saucepan, combine white vinegar, sugar, salt, and dill. Bring to a simmer until sugar and salt dissolve.

    Pickle Cucumbers

    Pour the hot brine over the sliced cucumbers in a jar. Let it cool, then refrigerate for at least 1 hour before use.

Sandwich Assembly

    Toast Buns

    Lightly toast the brioche or hamburger buns on a skillet or in a toaster.

    Assemble Sandwich

    Spread mayonnaise on the bottom half of the bun, add fried chicken, top with lettuce leaves and house pickles, then place the top half of the bun.
